Throughout the comprehensive Saaten-Union portfolio you will find such varieties. All German varieties have to go through an official quality testing process which is conducted by the “Berliner Programm“.
This program is an innovative and transparent and was relaunched in 2005. Here our varieties get their first independent approval regarding malting quality. The program is carrying out trials in different scales over a period of two years taking two different crops into account. Malting is performed in laboratory (1kg), pilot (200kg) and industrial scale. All data are analysed and evaluated by a committee consisting of representatives of the malting and brewing industry as well as scientists from the well known research institutes of Berlin and Weihenstephan. Our breeding program is focusing on the demands of the agricultural as well as the malting and brewing industry. We select varieties with a wide spread agronomical adaptation. Stable yields on a high level even under hot and dry conditions are important criteria. We are looking for varieties that are tolerant or resistant against a wide composition of diseases in order to reduce fungicide and labour input. We are offering varieties that are easy to handle in the malt house and allow optimal processing in the brewery. Only well modified cell walls guarantee good filtration in the brew house and in the cellar. To produce high quality beer good fermentation and high foam stability are important. This can only be achieved by controlled proteolysis. A homogenise modification of cell walls as well as protein structures are important. For a good process in the brewery and high beer quality a well balanced modification of cell walls and protein is necessary.
